Previously operating as the Round Top Smokehouse, Merritt Meat Company is a new BBQ concept from the owners of Truth Barbecue that pays tribute to former owner Lee Ellis (RIP, Lee). New owners Abbie Byrom-Botello and Leonard Botello used Ellis’ middle name Merritt for their new restaurant in a nod to the larger-than-life Round Top legend.
